I went to a playdate with Dax last week, and one of the kind moms brought some yummy cake balls! After we left, I couldn’t stop thinking about the darn things. I went to the grocery store, grabbed some ingredients, and decided to make my own.
I used this recipe, from all recipes.com. Well, it’s more like instructions than a recipe, since there are so many different options. It has been downloaded more than 30,000 times. WOW!
I decided to use strawberry cake mix, vanilla icing, and semi sweet melted chocolate. Neapolitan!!
I started by using my fantabulous mixer to make the cake. In case you can’t tell in the pics, my mixer is PURPLE! And I absolutely love this thing!
Next, you just bake the cake in any pans you’d prefer. I used two 8″ round pans. MMmmmmmm strawberry!
When the cake is finished baking, take it out and let it cool. Then crumble it into a large mixing bowl, and add 1 container of icing.
Stir the cake and icing thoroughly, then pop the bowl into the freezer for an hour or two. This makes the ball-rolling process easier when the mixture is cold.
Line a pan with wax paper, and you are ready to begin. You can use a watermelon scoop, ice cream scoop, etc- depending on how big you want the cake balls to be. I just scooped a tablespoon full and rolled them in my hands.You can also spray your hands with cooking spray so the mixture won’t stick while rolling.
Next, melt the chocolate in a small bowl. This is where my problem came in. I could not get the chocolate thin enough for dipping, so I added some butter. I used a makeshift double boiler to melt the chocolate. Then you use a toothpick or fork to dip the cake balls in the chocolate. You can then sprinkle them with nuts, coconut, candy, etc. I decided to leave these plain- mainly b/c Dax used all of the sprinkles on my all chocolate batch!
Let them dry, and TADAS! You have some deliciously delightful desserts. =D
